I was going to makeover momma's recipe for pancakes, usually I always use King Arthur Whole Wheat Pastry flour, it is fabulous cause so far I have used it in many regular recipes with great success and no complaints for the kiddos whom I have fed it to.. Friday's recipe also includes a whole wheat substitution. But I came across this awesome recipe how can you resist it.

Whole wheat pancakes
1 1/4 cups King Arthur White Whole Wheat flour
(this flour is so fine and so mild, it can be used in any recipe!)
3 teaspoons baking powder
1 1/2 tablespoons sugar
1/2 teaspoon salt
Dash of cinnamon
1 beaten egg
1 cup milk
2 tablespoons vegetable oil
1 teaspoon vanilla
Sift together the dry ingredients. Combine milk, beaten egg, vanilla and salad oil; add to dry ingredients stirring just till moistened. Bake on hot griddle. Makes about 12 dollar-size pancakes. (I usually have to double the recipe to make enough regular-sized pancakes for six people.)
